Tennessee and Hamilton County set the food rules here

Georgia’s forms and deadlines stop at the state line. The city’s Special Event Planning Guide says every food vendor at a special event must be fully licensed by the State of Tennessee and Hamilton County, and vendors may be inspected by the fire department and the Hamilton County Health Department. Call that office early to confirm the current application and lead time.

If your event is on the Georgia side, in Catoosa or Walker County, Georgia’s rules do apply, and the state’s vendor application is due 30 days before the event.

Riverfront parks charge for what sits outside your permit window

An event on public property, or one with vendors, a street closure or a community market, needs a Special Event Permit, and the city’s deadline is 60 days before the event. At Coolidge Park, Ross’s Landing and Renaissance Park, equipment left outside your permitted set-up and tear-down period can add park usage fees. Delivery the day before gives a trailer time to get cold, so make sure your permit window includes that day.

A trailer that takes up paid parking adds another step. The Parking Authority bills for each space removed from service, payment is due seven days before set-up, and you may need temporary no-parking signs up a week ahead. Put the trailer on your site plan from the start.
